Strawberries are now around in abundance, waiting to be picked up and devoured. I am constantly finding new ways of bringing them to my table in one form or the other. These fresh, juicy berries have a great health benefit in the way of Vitamin C, high fiber and minerals. Here is a punchy and energizing breakfast-parfait. Such a delightful and energy boosting way to start the day!

Strawberry breakfast parfait

The ingredients 

  • 450 gm fresh strawberries
  • 1 cup thick yogurt
  • 3-4 tbsp cream (optional)
  • Honey to taste
  • 1-1½ cups breakfast cereal (of your choice)
  • ½ cup almonds

Method

  • Wash, hull, and chop the berries.
  • Beat the yogurt, cream and honey till smooth.
  • Select individual sized bowls for the layering.
  • Place some cereal at the base of every bowl, followed by a layer of strawberries. Spoon some yogurt over the top, add slivered almonds, then repeat the process.
  • Finally top off with some almonds and a few slices of strawberries.
  • Serve immediately while the cereal is crunchy.

Note: Transform this recipe into a dessert parfait. Omit the cereal and add layers of juice soaked cake into the equation. Substitute the yogurt with sweetened whipped cream or ice-cream. Top it up with a trickle of fruity jam or chocolate shavings.
