Poriyal is a vegetable side dish, often made by combining a dal and a vegetable, usually wax gourd, which is commonly known as winter melon or pethakaddu. Using of canola oil for this dish helps the ginger-garlic paste come together. It’s also the perfect oil for sautéing aromatics, thanks to its own mild flavour.

Serves: 2-3 persons | Preparation time: 20-25 minute | Cooking time: 20-25 minute

Ingredients

  • 10 gm ginger 
  • 5 cloves garlic 
  • 2 tbsp plus 4-5 drops of canola oil
  • 1/2 cup split pigeon pea (tur dal)
  • 1 red chilly (dried)
  • 1 tbsp split black gram (urad dal)
  • 1 tbsp black mustard seeds
  • 1 sprig curry leaves (kari patta)
  • 2-3 green chillies 
  • 1 small onion, finely sliced 
  • 1 medium tomato, chopped
  • 1/2 tbsp turmeric powder
  • 350 gm wax gourd (winter melon), deseeded and cut lengthwise into 5-6 pieces
  • Pinch of salt
