Egg paneer, chicken chips to tickle your taste buds

Till now you have been relishing paneer in the standard form, made from milk. Have you ever heard of egg paneer? There is another new entry — chicken meat chips.

These tow novel products have been introduced by the Department of Livestock Products Technology (LPT), Guru Angad Dev Veterinary and Animal Sciences University (GADVASU), and were displayed during the two-day Pashu Palan Mela that concluded today.

The department caters to the needs of entrepreneurs, consumers and farmers in the development of health-oriented and value-added livestock products, particularly made of meat and egg.

“Egg paneer is a nutritionally superior compared to the convention paneer. It is rich in protein. The processing technology is available for transfer to promising entrepreneurs. This egg paneer has standard proteins (14-16%), is rich in all essential amino acids and fat (5-7%) with all essential fatty acids required for the brain and body development,” said Dr Manish Kumar Chatli, Professor-cum-Head of Department of Livestock Products Technology.

Various products can be prepared from this egg paneer, such as egg paneer pakoras, egg paneer curry products, egg cheese fingers, etc. Many varieties of egg paneer such as masala paneer, green egg paneer etc. are also being developed, added Dr Chatli.

Vacuum packaged egg paneer has a storage life of more than three weeks at refrigeration temperature.

Chicken meat chips, another product developed by the department, found many buyers during the two-day mela. It is a healthy product mainly for children who have a craving for snacks.

“The traditional chips available in the market contain high amount of carbohydrate and fat, which is not good for health, particularly in growing children. Incorporation of chicken meat in chips has increased its nutritional value. Further, it has added to the taste which is being widely accepted by people,” added Dr Chatli.

Training programme

He said the department was organising a training programme for farmers in meat processing, and preservation, packaging, value addition and marketing of meat and eggs from March 25 to 30. It is funded by ICAR, New Delhi, and no fee will be charged from participants.
