The best ingredient to use in the kitchen is the seasonal vegetable or fruit for the real taste. These days, we find the very piquant water chestnut which has a look of its own with purple hues. Do try this salad which not only looks good but is also tasty and nutritious

Ingredients:

  • 1 cup yellow capsicum (cut lengthwise)
  • 1 cup red capsicum (cut lengthwise)
  • 1 cup green capsicum (cut lengthwise)
  • 10 -15 chestnuts
  • 5-7 salad leaves
  • 10 -15 walnuts

For dressing:

  • 1/2 cup rice vinegar
  • 4 tbsp olive oil
  • Pinch of sugar
  • Salt, to taste
  • 10-15 mint leaves

Method:

1. Mix olive oil, sugar, salt and rice vinegar in a glass bowl. Add few mint leaves. Mix well. Keep the dressing aside.

2. Mix the red, yellow and green capsicum, chestnuts and walnuts in another bowl. Toss them well.

3. Pour the dressing over the vegetable bowl. Serve chilled.
